You have taken the leap and gone for an espresso machine just like the one at the local coffee shop.

You like milk not too hot but not too warm. It needs to be just the right temperature.
In fact. If you are going to make a great cappuccino or latte then you need to ensure that the milk is heated up to between 60 and 70 degrees.
Any colder than 60 and, well, it’s just not hot enough. Any hotter than 70 and you risk the milk burning which will ruin the flavour of the coffee.
So you need a jug to heat the milk and a thermometer inside the jug whilst you are heating it.
When you have the milk in the jug and a thermometer inside the milk and the steam wand is in the milk you have to juggle everything and position it all properly to make sure the steam is not on the thermometer so that it gives a false reading. I know because I have been there.
