Once the coffee is ground and sits in the portafilter in a heap we need to make sure that it is pressed down in exactly the correct manner so that all of the other elements of espresso preparation fall perfectly into place.
A coffee tamper is crucial to making sure that the coffee is pressed down just enough but not too much.
If the coffee is too loose then you will get what we call in the business “water channelling”. This means that when the pump is activated and water is forced through the coffee at high pressure, water will travel through the path of least resistance which in this case will be down the side of the coffee and not through it causing a more watery and diluted final product.
If the coffee is too tightly packed then the pump will not be able to force the water through the coffee and you’ll just get drips of coffee coming through and you will have to start again.
How do you know if you have it just right? Coffee scientists have proven that the best way to achieve just the right pressure to get just the right amount of compression on the ground coffee is to press it down with 30 pounds of pressure.
If you ask a Barista, they will tell you that this means quite firm but not too firm. Bottom line is that you will be guessing and you won’t really know if you are getting any water channelling or not.
